Description and overview

The shell encloses the kernel or meat, which is usually made up of two halves separated by a partition. The seed kernels – commonly available as shelled walnuts – are enclosed in a brown seed coat which contains antioxidants.
Black spots
Most likely, the black walnuts have “anthracnose,” a very common non-lethal fungal infection. It causes leaf shedding and lesions on the walnut husks as you describe. It spreads in splashing water when there is a lot of lingering rainfall in spring, like we had this year.
Moisture content
The nuts with hulls had an average moisture content of 32.99% compared to 13.86% for nuts without hulls. … On average, the differ- ences in moisture content between shell and kernel was 11.56% for nuts with hulls and 6.45% for nuts without hulls.
